SekolahNews – detik.com, Selama ini masakan Minang yang bersantan kerap dihindari karena dianggap tak sehat. Hasil penelitian Guru Besar Ilmu Gizi Fakultas Kedokteran Universitas Andalas (Unand) Padang menemukan masakan Minangkabau yang bersantan ternyata sehat dikonsumsi.
Guru Besar Ilmu Gizi Fakultas Kedokteran Universitas Andalas, Prof Nur Indrawaty Lipoeto di Padang mengatakn selama ini banyak yang khawatir makanan bersantan berdampak buruk bagi kesehatan. Makanan ini dianggap bisa menyebabkan kolesterol jahat dalam tubuh, sehingga memicu sakit jantung, tekanan darah tinggi dan stroke.
Akan tetapi setelah dilakukan penelitian, ternyata makanan Minangkabauyang bersantan tersebut sebenarnya sehat.
“Santan memang mengandung lemak, namun terdiri dari campuran air, yakni di setiap 100 gram santan terdiri dari 25 persen lemak dan 75 persen air,” ujar Prof Nur.
Selain itu, menurutnya makanan yang bersantan lebih sedikit mengandung lemak dibandingkan makanan yang digoreng.
Bahkan ia khawatir jika orang Minang berhenti mengonsumsi santan dan beralih ke masakan yang digoreng karena berbahaya untuk kesehatan.
“Apalagi jika makanan yang digoreng menggunakan minyak bekas yang telah berkali-kali digunakan,” kata dia.
Selain itu makanan bersantan juga terdiri dari banyak bumbu dan rempah-rempah seperti kunyit, jahe, lengkuas, serai, bawang merah, bawang putih, dan dedaunan yang mengandung antioksidan.
Supaya menikmati masakan bersantan yang sehat, maka ia menyarankan agar memilih daging yang padat dan tidak berlemak untuk dikonsumsi.
Selain itu dimasak dengan menggunakan api yang sedang yakni sekitar 87 derajat Celcius, sehingga dapat membuat masakan menjadi sehat karena oksidasi pada lemak lebih sedikit.
“Biasanya kalau menggoreng makanan menggunakan suhu lebih dari 200 derajat celsius, sehingga proses oksidasi menjadi cepat dan perubahan yang terjadi pada makanan tidak sehat,” katanya.
Ia juga mengatakan Minangkabau terkenal dengan masakannya yang bersantan, salah satunya ialah rendang yang merupakan makanan khas orisinal warisan nenek moyang secara turun temurun.
“Jika kita tidak memasaknya karena takut tidak sehat, lalu siapa lagi yang akan memasak dan mengembangkannya,” ujar dia.
Penelitian tersebut sudah dilakukan sejak tahun 1998, bahkan sudah dipublikasikan di jurnal-jurnal nasional maupun jurnal internasional dan sudah dipublikasikan juga di seminar nasional maupun internasional.
“Sejak tahun 1998 hingga saat ini saya masih melakukan penelitian tentang manfaat dari makanan bersantan,” katanya.
